Towards new sustainable approaches for industrial pectin production

This postdoctoral research project aims to build a knowledge platform as a basis for critically evaluating the industrial extraction process of pectin from lemon peels with the ultimate goal of developing a more sustainable process. This general objective is based on the research hypothesis that the pretreatment of lemon peels, in which tissue and cell structures are broken, promotes the extraction process and can thus contribute to the development of sustainable processes.
