Opportunities for targeted fat tissue cultivation in the formulation of plant-based meat analogues.

The general goal of this project is to study the application potential of tailor-made cultured fat in plant- based meat analogues. More specifically, the goal of this project is to understand the impact of fat characteristics (crystallization properties and cellular matrix) on the structure and physical stability (i.e. the ability to retain water and fat) of meat analogues, which allows to tailor fat cultivation for use in meat analogues.
