Evaluation of food quality throughout the vegetable processing chain (VeggieChain). (VeggieChain)

To produce high quality vegetable based foods, there is a need for a quantitative integrated approach investigating the impact of the whole processing chain and aiming to understand and quantify the effect of different process chain variables on key food components. Such quantitative approach is imperative to be able to (i) predict the integrated effect of various processes in the production chain of vegetables and (ii) predict the consequences of different process histories on residual quality characteristics.

In the veggiechain project, for Flanders relevant vegetable systems will be studied at the level of the impact of the different steps of the processing chain on food quality spanning from structure, over flavour to nutritional properties.
