Potential of cricket-enriched products to improve nutrition and health of lactating women and children (6 – 24 months)

Entomophagy, the practice of eating insects has increasingly become important. House crickets (Acheta domesticus) are among the commonly eaten insects globally. The study will assess the potential contribution of cricket-enriched foods on nutrition and health among vulnerable women and children in urban slums in Uganda. The targeted groups include lactating women and children (6-24 months) who will be accessed at Kawaala Health Center 111 and Komamboga health center 111. A cross-sectional study will be carried out to determine the base-line nutrition status of the target groups after which a nutritious cricket enriched porridge flour product will be developed to address identified nutrient gaps. The safety, nutritional and rheological properties of the developed product will be studied. Consequently, an effectiveness study will be done to evaluate the effectiveness of the developed cricket enriched product to improve health and nutrition of the target groups.
