Food and diet in the USA and Britain in the long 1980s.

Abstract:The thesis explores how food and diet changed in the USA and Britain between the late 1970s
and the early 1990s (hereafter referred to as the long 1980s), to determine the contribution of
this period to writing food history. Beyond the chronology, the effects on the Western diet and
the transformations of food and nutrition patterns are examined through a cross-continental
comparison supported by different sources and methodological approaches. The thesis focuses
on two culinary magazines (Gourmet and Petits Propos Culinaires), and it aims to establish
their role as intermediaries in creating, spreading, and promoting the long 1980s taste, lifestyle,
and consumer culture. The investigation is supported by an analysis of the magazines' contents
and recipe indexes.
