Interfacial behaviour of polyglycerol polyricinoleate (PGPR) in W/O emulsions - A molecular study

The aim of this project is the quantification and characterisation of the molecular composition of PGPR   (via GC-analysis of the fatty acid and polyglycerol composition), a frequently used W/O emulsifier. Moreover, its interfacial properties are investigated and the molecular species of PGPR (differing in number of (poly)glycerol and/or ricinoleate units) are compared before and after adsorption at the oil water interface.
