Project
AlgFlavor - Enhancing algal biomass consumer acceptance for food market
AlgFlavor deals about using seaweeds and microalgae (collectively called algae) as a sustainable food
source. These are rich in nutrients like protein, minerals, and omega-3 fatty acids, and can help meet
the growing demand for healthy and eco-friendly diets. However, there are challenges in making
algae-based foods popular, mainly because of their taste, smell, and appearance.
To address these challenges, AlgFlavor is working to improve consumer acceptance of foods
containing algae. Different types of algae have different flavors, ranging from bitter to savory. Some
algae even have a seafood-like taste, making them suitable for plant-based seafood alternatives.
The flavor of algae can be influenced by how they are grown and processed. AlgFlavor aims to
optimize these conditions to ensure consistent flavor. They're also developing ways to incorporate
algae into various food products, like bread and sauces, to showcase their potential.
Algae have promising flavor and nutritional properties but need to be more consistent, affordable,
and safe for consumption. AlgFlavor plans to address these concerns by conducting sensory
evaluations, chemical analyses, and developing diverse food prototypes.
Their ultimate goal is to create a market for algae-based food products, particularly focusing on
plant-based seafood alternatives, by improving consumer acceptance and understanding the needs
of both producers and consumers.
