Evaluation of the carbonation-related properties and mouthfeel of alcoholic and non-alcoholic beers
Physicochemical and sensory evaluation of four alcoholic beers and their non-alcoholic counterparts. The goal of this study is to investigate the relationship between carbonation characteristics and mouthfeel perception of alcoholic and non-alcoholic beers.
